I spent years just layering oysters on the grill. So I could only cook 15 at a time. I saw on TV Anthony Bordain in South Carolina where they cooked the oysters over a fire. They put a steel plate 4 feet in diameter with legs (like a coffee table) over the fire, placed the oysters in a pile, and put a large gunney sack soaked in water over the oysters. They rolled the sack so it wouldnt start on fire, and they were great, said Anthony Bordain.

Anyway, I decided to try a similar but different method, and I put a 2 inch deep pan on the grill filed with water. I waitltill it is boiling, and then place probably 50 2 inch oysters in the pan. I pile them till they hit the top of the grill. They are incredible, just as tasty as grilled. If you think about it, oysters are steamed no matter how you cook them (in the shell) because they steam in their own juices. This method frees me from having to attend to 15 at a time all day long, and I have much more time with company. And the grill doesnt get rusted nearly as fast.
