Oyster Knife?

What qualities should I look for in an Oyster knife? Particularly blade length, handle shape and material.

Different people have different preferences for oyster knives, so it really comes down to what you are comfortable with. Some things to think about: a longer blade will allow you to open some of the larger oysters easier, but if you're only opening small oysters like Kumamoto or Olympia then shorter blades can be easier to handle. Rounded handles are also nice and easy to grip, you can get these in wood or plastic. The blade should also be pointy and sharp but not too sharp as slips can be dangerous.
My favorite shucking knife is actually a used knife from the Taylor retail store in Shelton-the handle is made of plastic. They usually have lots to choose from so you can pick one that suits you best. :) Plus they are already broken in nicely. Good luck!
